The Broth
The heart of our ramen – homemade and full of depth
The foundation of our ramen in South Tyrol is a slowly simmered double broth made from chicken and dashi (fish and mushrooms), creating deep umami flavor and rich character.
Our vegan ramen broth is made from organic mushrooms from South Tyrol, combined with leek, tomatoes, and carefully selected vegetables – intense, balanced, and entirely plant-based.
Our ramen noodles are freshly made in-house every day, following traditional Japanese techniques and crafted with great attention to detail.

We combine authentic methods with regional ingredients: the dough is made using three carefully selected flours from South Tyrolean mills. The result is noodles with perfect texture, a pleasant bite, and a distinctive flavor.
